'G.I' is my first generation of chef's knives. It aspires to be an ideal knife for 'pinch grip' and 'the claw'. The tall overall profile of knife helps maintain contact with the non-cutting hand, and its rounded spine reduces the impact on cook’s skin when interacting with the knife. The 'G' relates to 'Gyuto' (Japanese chef’s knife suited for a variety of tasks).
