'G.II' is a second generation of chef's knives which I have designed & crafted. The first generation aspired to be an ideal knife for 'pinch grip' and 'the claw' - common cutting techniques of chefs. The 'G.II' builds on the successes of the first generaton to further enhances the cutting experience with more finesse.
The 'G' relates to 'Gyuto' (Japanese chef’s knife suited for a variety of tasks).
The knife's handle is based on traditional Japanese octagonal handles, but designed with a smooth transition towards the blade for enhanced comfort of the 'pinch grip'. The geometrical sculpting of the handle subtly hints to Cubist designs produced in the Czech Republic. The beech wood which makes the handle was sustainably sourced in the Czech Republic.
